On Healthy Options.

I love to eat. But it frustrates me whenever there's limited healthy options on the table. Don't get me wrong. I could pig-out on anything if I want to. But I have a responsibility to my body. I am aware of that. I cannot feed it with junks all the time (and complain when I get sick and becomes unfit). I respect my health. It's my obligation to take good care of it.

I am happy whenever I discover something new. I am happy that I am working for a health-conscious family. I learn a lot. I recently learned about kale. It tasted good with olive oil, lemon, and cheese. I googled and it is said that is one of the most nutritious vegetables. It is even effective when steamed. I like both the raw (salad) and the steamed. I am now serving it at home. I am glad C likes it in lieu of his regular green salad.

Here's what WHFoods.org has to say about kale:
  • Kale can provide you with some special cholesterol-lowering benefits if you will cook it by steaming. The fiber-related components in kale do a better job of binding together with bile acids in your digestive tract when they've been steamed. When this binding process takes place, it's easier for bile acids to be excreted, and the result is a lowering of your cholesterol levels. Raw kale still has cholesterol-lowering ability--just not as much.
  • Kale's risk-lowering benefits for cancer have recently been extended to at least five different types of cancer. These types include cancer of the bladder, breast, colon, ovary, and prostate. Isothiocyanates (ITCs) made from glucosinolates in kale play a primary role in achieving these risk-lowering benefits.
  • Kale is now recognized as providing comprehensive support for the body's detoxification system. New research has shown that the ITCs made from kale's glucosinolates can help regulate detox at a genetic level.
  • Researchers can now identify over 45 different flavonoids in kale. With kaempferol and quercetin heading the list, kale's flavonoids combine both antioxidant and anti-inflammatory benefits in way that gives kale a leading dietary role with respect to avoidance of chronic inflammation and oxidative stress.

Then I learned about parsley tea-- that it's good for our kidney. We're taking half-a-glass each at night. C hates the taste of it but he takes it. That is one of the many things that I love about this man. He does what is good for him and he knows how to avoid war. *hah!*

Seriously, we have a lot of healthy food options here. But it's not a wonder why a lot of people are unfit. Sometimes I feel that way, too. And I know it's my own doing and undoing. Our being fit always needs a conscious effort. I know.
