My Twisted Banana Bread.

I was caught mixing coffee granules into my regular banana bread mix. My idea was to let them guess my added ingredients. This is my second time to try baking this bread and I thought I'd put a little twist on it.


I asked Carlos to crush some walnuts and pecan nuts while he was on his break from work and while I was mashing the bananas. I did not know he'd come back, that's when he caught me sprinkling my secret ingredient-- coffee. He was worried that the bread won't be as good as my first attempt (he said he loved the first one). But I cannot be stopped from getting a little adventure. What he did not know is that I added another ingredient-- orange juice!

It turned out that he like it better than my original basic banana bread. Here's my modified recipe:

INGREDIENTS:
2 ripe bananas, mashed
1/3 cup of orange juice (no pulp)
1/3 cup melted butter
1 teaspoon instant coffee
1/2 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

1/2 cup crushed walnuts
1/4 cup brown sugar

METHOD:
Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas and orange juice in a large mixing bowl. Mix in the sugar, 1/4 cup of crushed walnuts, egg, vanilla, and coffee. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix.

Pour mixture into a buttered 4x8 inch loaf pan.
Sprinkle the rest of the crushed walnut mixed with brown sugar, over the top.

Bake for 50-55minutes. Cool on a rack. Remove from pan and slice to serve.
